Does this mean he's deemed not guilty until a verdict has been reached in the new trial, or that he's still guilty pending a retrial, does anyone know?

The conviction has been quashed so he's back in the position he was before the trial; innocent till proven guilty. Sub judice rules apply again so people should be careful what they post.

The Court of Appeal received fresh evidence from the defence on the basis of which they quashed the verdict and ordered a retrial. He will have to be recharged first. They are not publishing the grounds on which they allowed the appeal against the verdict so as not to prejudice the retrial.

I think it would depend on what new evidence came to light, but unless it's particularly incriminating (i.e. something like her trying to put the feelers out to sell her story to a publicist) then that would be unlikely.

I know from reading the case his legal team had been trying to find evidence of a text message or FB post from the victim that made it clear she was lying and trying to get money out of him as he was a footballer, it was supposed to be very daming of her, so maybe they have got it.

If found not guilty can he sue for loss of earnings and deformation of character? I know I would.

In fairness they made their decision based on a conviction under English law (not that I agreed with them). He still faces a retrial, but it was quashed on appeal due to new evidence apparently.

As an aside, are you not guilty or innocent if a prosecutor fails to prove your guilt in the UK?

In English and Welsh law, there is just 'guilty' and 'not guilty'. In Scotland, there's something called 'not proven', too (https://en.wikipedia.org/wiki/Not_proven).
